Farmer's Breakfast Skillet
- 2 slices bacon
- 1 potato
- 1 green onion
- 1 egg
- salt and pepper
- Cut your bacon into pieces and fry until done.
- Remove from the skillet and set aside.
- Add diced potato and cook until almost done.
- Add chopped green onion during the last minute or so of cooking.
- Add the bacon back into the mixture.
- Season with salt and pepper to taste.
- Make a well and crack in one egg.
- Cover and turn off heat.
- Cook until the egg is how you like it.
